Creamy Tofu Curry

Ingredients:
260 g firm tofu, diced
2 tbsp olive oil
1 tbsp curry powder
300 ml coconut milk
3 garlic cloves, minced
1 small onion, chopped
226 g tomato puree
1/4 tsp chili powder
2 bell pepper, chopped
Salt & Pepper to taste
Directions:
Add all ingredients except tofu into a blender and blend until smooth.
Pour blended mixture into a pot on medium heat for 10 minutes, stirring occasionally.
Add tofu and stir everything well.
Cover pot with a lid and cook on low heat for another 30 minutes.
Stir well and serve.
