Creamy Tofu Curry

Prep Time: 10 min | Cooking Time: 40 min | Serve: 4

Ingredients:

  • 260 g firm tofu, diced

  • 2 tbsp olive oil

  • 1 tbsp curry powder

  • 300 ml coconut milk

  • 3 garlic cloves, minced

  • 1 small onion, chopped

  • 226 g tomato puree

  • 1/4 tsp chili powder

  • 2 bell pepper, chopped

  • Salt & Pepper to taste

Directions:

  1. Add all ingredients except tofu into a blender and blend until smooth.

  2. Pour blended mixture into a pot on medium heat for 10 minutes, stirring occasionally.

  3. Add tofu and stir everything well.

  4. Cover pot with a lid and cook on low heat for another 30 minutes.

  5. Stir well and serve.
