Coconut Fish Stew

Prep Time: 10 min | Cooking Time: 15-20 min | Serve: 6

Ingredients:

  • 900 g halibut fish fillets

  • 1/4 tsp paprika

  • 500 ml chicken stock

  • 1 can tomatoes, diced

  • 1 can coconut milk

  • 2 tbsp olive oil

  • 2 bell peppers, chopped

  • Salt & Pepper

  • Parsley to garnish

Directions:

  1. Heat oil in a saucepan over medium heat.

  2. Add bell peppers and cook for 4-5 minutes.

  3. Add fish and slowly mix for another 2 minutes.

  4. Add remaining ingredients, stir well and cook for 10 minutes.

  5. Stir well and serve.
