Coconut Fish Stew

Ingredients:
900 g halibut fish fillets
1/4 tsp paprika
500 ml chicken stock
1 can tomatoes, diced
1 can coconut milk
2 tbsp olive oil
2 bell peppers, chopped
Salt & Pepper
Parsley to garnish
Directions:
Heat oil in a saucepan over medium heat.
Add bell peppers and cook for 4-5 minutes.
Add fish and slowly mix for another 2 minutes.
Add remaining ingredients, stir well and cook for 10 minutes.
Stir well and serve.
