Creamy Broccoli Soup

Ingredients:

  • 600 g broccoli head, cut into florets

  • 400 g can coconut milk

  • 1500 ml vegetable broth

  • 1 cup red lentils

  • 4 garlic cloves, minced

  • 1 medium onion, diced

  • 1 tbsp olive oil

  • Salt

Directions:

  1. Heat oil in a large pot over medium heat.

  2. Add onion and sauté for 5 minutes. Add garlic and sauté for a minute.

  3. Add broccoli, lentils, coconut milk, and broth, and stir well. Bring to boil.

  4. Turn heat to low and simmer for 15-20 minutes. Season with salt.

  5. Puree the soup using a stick blender until smooth.

  6. Serve and enjoy.
