Creamy Broccoli Soup

Ingredients:
600 g broccoli head, cut into florets
400 g can coconut milk
1500 ml vegetable broth
1 cup red lentils
4 garlic cloves, minced
1 medium onion, diced
1 tbsp olive oil
Salt
Directions:
Heat oil in a large pot over medium heat.
Add onion and sauté for 5 minutes. Add garlic and sauté for a minute.
Add broccoli, lentils, coconut milk, and broth, and stir well. Bring to boil.
Turn heat to low and simmer for 15-20 minutes. Season with salt.
Puree the soup using a stick blender until smooth.
Serve and enjoy.
