Zucchini Eggplant Casserole

Ingredients:
1 medium eggplant, sliced
150 g tomatoes, sliced
3 medium zucchini, sliced
1 tbsp olive oil
4 garlic cloves, minced
2 tbsp basil, chopped
85 g parmesan cheese, grated
2 tbsp parsley, chopped
1/4 tsp salt & pepper
Directions:
Preheat the oven to 350 F/ 180 C.
Add all ingredients into the bowl and toss well to combine.
Pour vegetable mixture into the greased baking dish and bake for 35 minutes.
Serve and enjoy.
