Grilled Fish Skewers

Prep Time: 10 min | Cooking Time: 10 min | Serve: 4

Ingredients:

  • 600g white fish fillets, cut into small chunks

  • 2 bell pepper, cut into small pieces

  • 2 red onions, cut into small pieces

  • 4 garlic cloves, minced

  • 2 tbsp olive oil

  • 1/4 tsp cayenne

  • 1/2 tsp ground cumin

  • 1/2 tsp paprika

  • 2 tbsp fresh lemon juice

  • Salt & Pepper

  • Lemon for garnish (optional)

Directions:

  1. Add fish, bell peppers, onions and remaining ingredients for marinade into a bowl and mix well. Cover and place in the fridge for 1 hour (this is for the flavour to seep in, however if pressed for time, you can go straight to the next step.

  2. Thread marinated fish, bell peppers and onions onto long skewers.

  3. Preheat the grill.

  4. Arrange fish skewers onto the grill and cook for 3-4 minutes on each side.

  5. Serve hot and enjoy.
