Healthy Baked Veggies

Prep Time: 10 min | Cooking Time: 40 min | Serve: 4

Ingredients:

  • 570 g potatoes, cut into 3cm pieces

  • 3 garlic cloves, minced

  • 340 g zucchini, cut into 3cm pieces

  • ½ tbsp chopped rosemary

  • 3 tbsp olive oil

  • ½ tbsp chopped thyme

  • 400 g carrots, cut into 6cm pieces

  • Salt

Directions:

  1. Preheat the oven to 200 C/ 400 F.

  2. In a bowl, mix together potatoes, rosemary, 2 tablespoons of oil, thyme, carrots, and salt.

  3. Spread potato mixture onto a baking sheet and cook in preheated oven for 20 minutes.

  4. Toss zucchini with the remaining oil and garlic.

  5. Add zucchini onto a baking sheet with potato mixture and cook for 20 minutes.

  6. Serve and enjoy.
