Healthy Baked Veggies

Ingredients:
570 g potatoes, cut into 3cm pieces
3 garlic cloves, minced
340 g zucchini, cut into 3cm pieces
½ tbsp chopped rosemary
3 tbsp olive oil
½ tbsp chopped thyme
400 g carrots, cut into 6cm pieces
Salt
Directions:
Preheat the oven to 200 C/ 400 F.
In a bowl, mix together potatoes, rosemary, 2 tablespoons of oil, thyme, carrots, and salt.
Spread potato mixture onto a baking sheet and cook in preheated oven for 20 minutes.
Toss zucchini with the remaining oil and garlic.
Add zucchini onto a baking sheet with potato mixture and cook for 20 minutes.
Serve and enjoy.
