White Bean Salad

Ingredients:

  • 1 can white beans, rinsed & drained

  • 1 small onion, chopped

  • 1 ½ tbsp parsley, chopped

  • 2 garlic cloves, minced

  • ½ tsp smoked paprika

  • 8 black olives, pitted & sliced

  • ½ green bell pepper, diced

  • 75 g jar roasted red peppers, diced

  • 3 tbsp olive oil

  • 1 ½ tbsp red wine vinegar

  • Salt & Pepper

Directions:

  1. In a large bowl, whisk together oil, vinegar, parsley, garlic, paprika, pepper, and salt.

  2. Add remaining ingredients and stir well to combine.

  3. Serve and enjoy.
