Zucchini Mushroom Chicken

Prep Time: 10 min | Cooking Time: 20 min | Serve: 4

Ingredients:

  • 2 chicken breasts, diced

  • 1/2 tsp ground ginger

  • 1 medium zucchini, cut halfway (inside slightly scooped out)

  • 2 tbsp olive oil

  • 60 ml soy sauce, low-sodium

  • 1 tbsp garlic powder

  • 225 g mushrooms, sliced

  • 1 small onion, diced

  • 2 tomatoes, diced

  • Salt & Pepper

Directions:

  1. Preheat the oven to 400 F/ 200 C.

  2. In a large bowl, toss chicken with all ingredients except zucchini, and mix together.

  3. On an oven safe try, place zucchinis facing up and add chicken mixture into the scooped middle section.

  4. Cook in a preheated oven for 15-20 minutes until golden.

  5. Let rest for 5 minutes then add freshly diced tomatoes on top (optional).

  6. Serve and enjoy.
