Mushroom Avocado Toast

Ingredients:
2 slices Wholegrain Bread
1/2 medium ripe avocado
1-2 Tbsp olive oil
200g sliced shiitake mushrooms
1/2 tsp dried thyme
1 pinch of sea salt & pepper
1/4 tsp garlic powder
Directions:
Heat olive oil in a large skillet over medium heat. Add the sliced mushrooms and thyme. Cook for about 5 minutes, until softened and lightly browned. If mushrooms stick to the pan, reduce the heat slightly and add a little more oil.
Meanwhile, toast bread in toaster.
Once mushrooms are lightly browned, turn off the heat and stir in the salt, pepper, and garlic powder. Taste and adjust as needed, adding more salt to taste or pepper for spice.
Top the toasted bread with ripe avocado and use a fork to smash. Then top with sautéed mushroom mixture and enjoy.
